- 2 kg beef short ribs, cut into 3 inch pieces
- 4 tbsp of good quality garam masala (dry)
- 2 tbsp maldon sea salt
- 3 tablespoons vegetable oil
- 2 - 3 cloves of garlic (pressed or grated)
- 1 medium leek, coarsely chopped
- 1 medium carrots, coarsely chopped
- 1 celery stalk, coarsely chopped
- 2 shallots coarsely chopped (sub: onion)
- 1 cup good quality full bodied dry red wine (cab, amarone ..)
- 4 cups low-sodium stock (chicken or beef)
- 12 large brussel sprouts
- 1/4 tsp - 1/2 tsp fresh ground nutmeg
- 1/4 cup whole milk
- 1/4 cup heavy cream
- 1 cup vegetable or chicken stock (more if requried)
- 1/2 jicama, diced
- 1 medium beet, diced
- 1/2 roma tomato (or campari if you have it), seeded and diced
- 1/2 cup diced fennel
- 1/2 cup raw nuts (macadamian is best)
- 2 tbsp water
- 2 limes (juice of 1, zest of the other)
- maldon salt and ground pepper to taste
- 2 cups all-purpose flour
- 1 teaspoon salt
- 2 eggs
- 3/4 cup milk
- 2 tbsp madras curry
- 1/2 cup coconut milk
- 1 garlic clove
- 1/4 tsp ground nutmeg
- 1 tbsp lemongrass oil
- 2-3 tbsp chopped fresh cilantro
