Almond Rice Pilaf Recipe

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • ½ cup finely chopped shallots
  • 1½ cups long-grain white rice
  • 2 cups chicken stock
  • 1 cup water
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ cup chopped roasted almonds (see Note)
  • ¼ cup chopped fresh flat-leaf parsley

When I Want Something Just A Little Bit Different Or More Interesting Than Plain Rice For Dinner, This Fits The Bill Without Much Extra Chopping Or Preparation.
