For the meringue:
4 egg whites
220 g sugar

For the cream:
500 g mascarpone
400 g cream
1 tbsp Bourbon vanilla sugar
1 tbsp sugar

For the topping:
500 g sour cherries – pitted
1 tbsp sugar
1 tbsp Bourbon vanilla sugar
2 pinch of freshly ground cardamom
100 ml dry red wine
3 gelatine sheets
