1/3 cup minced onion
2 T flour
1 clove garlic, minced
1 bay leaf
1 1/2 cups milk
1/2 tsp dry mustard
salt and pepper, to taste
2 oz cheddar, grated
2 oz Jarlsberg, grated
1 oz parmesan, grated
1 oz smoked Gouda, grated
