Small Batch Potato Chips

Ingredients

Russet potatoes, scrubbed and sliced thinly (I usually assume about 1.5 potatoes per person.  If you have leftovers, no big deal.)
Frying oil (peanut or canola is good)
Salt
Pepper
You can go crazy on spices, but I like mine pretty simple

Helpful Equipment:
Mandoline Slicer
Deep Fry Thermometer (I had a glass kind, but I broke it for during this post.  I'm moving to metal now.)
