Ingredients
3 ears fresh corn
1 medium onion, diced
4 Tablespoons butter
2 Tablespoons olive oil
1.5 Cups Arborio rice
1/2 Cup white wine (optional)
8-10 cups chicken stock (or veggie stock), hot
1/4 Cup Parmesan Cheese, grated
Salt and pepper
For Arancini:
2 eggs, lightly beaten
3 cups bread crumbs
1 Teaspoon cayenne pepper (optional)
Salt and pepper
6 ounces sharp cheddar (or you could use a spicy cheese and eliminate the cayenne)
Canola or peanut oil for frying
