Moussaka

Ingredients

  • 1 qty medium Bechamel Sauce
  • 1 qty Basic Savoury Mince
  • 3 coliban potatoes, boiled in skins for 30 minutes, then sliced, or sliced before cooking and boiled for 10-15 minutes (longer cooking once sliced will cause them to break up too much to handle).
  • 1 large eggplant
  • 2 eggs, lightly beaten with a fork
  • Rice bran oil (as much as you need)
  • 2 cups cheddar cheese, grated
  • Flaked salt, to taste
  • Freshly ground black pepper, to taste
