Ingredients
- 1 qty medium Bechamel Sauce
- 1 qty Basic Savoury Mince
- 3 coliban potatoes, boiled in skins for 30 minutes, then sliced, or sliced before cooking and boiled for 10-15 minutes (longer cooking once sliced will cause them to break up too much to handle).
- 1 large eggplant
- 2 eggs, lightly beaten with a fork
- Rice bran oil (as much as you need)
- 2 cups cheddar cheese, grated
- Flaked salt, to taste
- Freshly ground black pepper, to taste
