- Ground cinnamon and cardamom for dusting

- 1 cup long grain rice
- 1 medium onion, finely diced
- 25 grams butter
- ⅓ cup pistachio nuts, roughly chopped
- 1½ cups chicken or vegetable stock
- ¼ tsp salt
- ¼ cup flat leaf parsley, chopped
- Freshly ground black pepper
- 1 roasted chicken - store bought or home prepared
- Natural yoghurt to serve (optional)
