Ingredients

  • 12 slices Crostini
  • 410g canned diced tomatoes
  • 1 carrot, peeled and finely diced
  • 2 stalks celery, finely diced
  • 2 Tbsp flat leaf parsley, chopped
  • 1 tsp fresh rosemary, finely chopped
  • 1 clove garlic, chopped
  • 200g lentils
  • 2 Tbsp olive oil
  • 1 large onion, finely diced
  • 4 slices pancetta, rind removed and finely chopped
  • ½ cup parmesan, grated
  • 1 small red chilli, seeded and finely chopped
  • 1 Tbsp tomato paste
  • 1lt vegetable stock or chicken stock
