  • ¼ cup cold water
  • Rind of 1 lime, finely grated
  • ⅓ cup fresh lime juice
  • ½ cup caster sugar
  • 2 cups pureed custard apple
  • 200ml pouring cream, whipped
  • For Salsa
  • 1 mango, peeled and seeded
  • ½ small papaya, peeled and seeded
  • Pulp of 2 passionfruit
