Stuffed Aubergine/brinjal

Ingredients

  • 1 aubergine/eggplant (appprox. 150g)
  • 180g 5 star topside mince,
  • 1/2 white onion, finely chopped
  • 2 slices bacon, rind and fat removed, finely diced
  • 1/2 green capsicum, seeded and finely diced
  • salt and pepper to taste
  • 1/2 cup grated tasty cheese
  • parsley and capsicum rings to garnish.
