- 1 aubergine/eggplant (appprox. 150g)
- 180g 5 star topside mince,
- 1/2 white onion, finely chopped
- 2 slices bacon, rind and fat removed, finely diced
- 1/2 green capsicum, seeded and finely diced
- salt and pepper to taste
- 1/2 cup grated tasty cheese
- parsley and capsicum rings to garnish.
