  • 1 1/2 cups caster sugar, 1 1/2 cups vegetable oil, 2 large eggs, at room temperature, 1 tspn vanilla, 1 tspn cochineal (red food colouring), (I used 2 tspns.) 2 1/2 cups plain flour, 3 Tblspn cocoa, 1 tspn salt, 1 cup buttermilk, 3/4 tspn baking powder, 2 tspn white vinegar, 3/4 tspn bi-carb of soda.
