Ingredients

  • Bulghur wheat salad:
  • 200 g (7 oz) bulghur wheat
  • 1 tbsp extra virgin olive oil
  • 3 tbsp lemon juice
  • 3 tbsp chopped fresh flat-leaf parsley
  • 1 tbsp snipped fresh chives
  • 2 medium-sized tomatoes, diced
  • salt and pepper
  • Crab salad:
  • 340 g (12 oz) fresh white crab meat
  • 2 avocados
  • 2 crisp green dessert apples
  • 125 g (4½ oz) bean sprouts
  • 3 tbsp reduced-fat mayonnaise
  • 3 tbsp plain low-fat yogurt
  • 1 tbsp lemon juice
  • small pinch of cayenne pepper
  • 2 Little Gem lettuces, separated into leaves
  • 30 g (1 oz) walnut halves, toasted and roughly chopped
