Ingredients
- 900g skinless chicken drumsticks
- 75 ml vegetable oil
- 2 onions, finely chopped
- 4 large cloves garlic, minced
- 2cm piece fresh ginger, peeled and minced
- 3 tablespoons white vinegar
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon garam masala
- 1/2 teaspoon freshly ground black pepper
- salt to taste
- 1/2 teaspoon ground turmeric
- 1/2 teaspoon cayenne pepper
- 8 dried curry leaves
- 1/2 teaspoon black mustard seeds
- 60ml water
- 945 ml vegetable oil for frying
- 1 large potato, peeled and cut into 2.5cm pieces
- 2 tablespoons distilled white vinegar
Description
A Chicken Vindaloo From Goa. It's Made With Chicken Legs Which Absorb The Flavours Better But You Could Use Chicken Breasts. Cubes Of Potatoes Are Deep Fried And Added To The Curry Near The End. Serve With Hot Rice.
