  • 1.35kg shallots, thinly sliced
  • 3 small red onions, chopped

  • 100g plain flour
  • 125ml rice vinegar
  • 3.75 litres water
  • 6 vegetable stock cubes
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon ground cayenne pepper
  • 1/2 teaspoon ground nutmeg
  • 2 tablespoons dried thyme
  • 6 dried wild or porcini mushrooms, softened in water
  • 1.35kg fresh mushrooms, sliced
  • 1.35kg carrots, sliced
  • 100g capers
  • 50g fresh parsley, chopped
