Vegan Tofu 'fish' Sandwich

Ingredients

  • 100g (4 oz) breadcrumbs
  • 1 teaspoon kelp powder
  • 1 clove garlic, minced
  • 1/4 teaspoon paprika
  • 1 teaspoon salt
  • 350g (12 oz) firm tofu - drained, pat dry and cut into 4 slices
  • olive oil, as needed
  • Tartar Sauce:
  • 100g (4 oz) vegan mayonnaise
  • 5 cornichons, chopped
  • 1 tablespoon fresh lemon juice
  • 4 wholemeal hamburger baps, split
