Tempeh Kebabs With Couscous

Ingredients

  • 225g tempeh, cut into 1.25cm squares
  • 16 fresh white mushrooms
  • 1 medium aubergine, cut into 2.5cm cubes
  • 1 large red pepper, cut into 2.5cm pieces
  • 16 cherry tomatoes
  • 125ml olive oil
  • 4 tablespoons soy sauce
  • 4 tablespoons teriyaki sauce
  • 3 tablespoons honey
  • 1 tablespoon grated fresh root ginger
  • 1 tablespoon chopped fresh garlic
  • salt and pepper to taste
  • 475ml vegetable stock
  • 1 tablespoon grated fresh root ginger
  • 1 teaspoon ground cumin
  • salt to taste
  • 175g dry couscous
  • 110g raisins
  • 180g drained tinned chickpeas
  • 1 lemon

Description
