Ingredients

  • 1 litre (1¾ pints) vegetable stock, preferably home-made light or rich
  • 1 onion, chopped
  • 2 carrots, cut into 1 cm (½ in) dice
  • 2 celery sticks, cut into 1 cm (½ in) dice
  • 1 parsnip, cut into 1 cm (½ in) dice
  • 2 potatoes, peeled and cut into 1 cm (½ in) dice
  • 50 g (1¾ oz) chestnut mushrooms, sliced
  • 1 garlic clove, chopped
  • 2 large sprigs of fresh coriander, chopped
  • salt and pepper
  • 4 plain naan breads or 4–8 pitta breads, to serve
  • Curried onion
  • 1 tbsp sunflower oil
  • 1 onion, thinly sliced
  • 1 garlic clove, crushed
  • 1 tbsp mild curry paste
  • Apple and courgette raita
  • 1 small courgette
  • 7.5 cm (3 in) piece cucumber
  • 1 dessert apple
  • 150 g (5½ oz) plain low-fat yogurt
  • 2 tbsp chopped parsley
  • handful of fresh mint leaves
