• 3-4 tablespoons brandy plus extra for sprinkling
• To decorate the cake
• 220g marzipan
• 1-2 tbsp apricot jam, warmed
• Royal icing
• 3 egg whites
• 655g icing sugar, sieved
• 2tsp liquid glycerine - optional
• 1 tbsp lemon juice
