Quick Christmas Cake

Ingredients

  • 250g plain flour
  • 1/4 tsp salt
  • ½ tsp mixed spice
  • ½ tsp ground cinnamon
  • 220g butter
  • 220g brown sugar
  • 2 tbsp treacle or golden syrup
  • 1 tbsp marmalade
  • 1/4tsp vanilla essence
  • 4eggs, lightly beaten
  • 875g mixed dried fruits
  • 110g chopped mixed peel
  • 155g glace cherries, halved
  • 110g blanched almonds, chopped
  • 3-4 tablespoons brandy plus extra for sprinkling
  • To decorate the cake
  • 220g marzipan
  • 1-2 tbsp apricot jam, warmed
  • Royal icing
  • 3 egg whites
  • 655g icing sugar, sieved
  • 2tsp liquid glycerine - optional
  • 1 tbsp lemon juice
