- 1 carrot, peeled and cut into 3 pieces

- 1 1/2 lb fresh spinach (or 2 packages frozen, chopped spinach – 10 oz each)
- 1/2 cup olive oil
- 2 cloves garlic, chopped
- 1/2 tsp sweet Spanish paprika
- 2 ripe tomatoes, peeled and sliced
- 2 eggs (optional)
- salt to taste
