  • 90 millilitres heavy cream
  • 150 millilitres brown veal stock or demi glaze
  • 10 grams parsley washed, chopped
  • 60 grams butter
  • vegetable oil for frying
  • 1 pinch paprika
  • iodized salt
  • white pepper from the mill
