Macintosh Pita Bread Pudding By P. Macvoy

Ingredients

  • 1/4 C. Vegetable Oil
  • 4 MacIntosh apples (cored and thinly sliced with skin)
  • 3 small tangerines or clementines
  • 1 tbsp honey
  • 1 tbsp sugar
  • 2 oz. rum
  • 1 tbsp chilled butter, chopped into chips with knife
  • 1 tsp balsamic vinegar
  • 1 tsp. vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp ground ginger
  • (or juice squeezed from 1 cm shredded fresh ginger root)
  • 1/4 tsp fresh ground nutmeg
  • 1/4 tsp salt
  • 2 tbsp wholewheat (or white all purpose) flour
  • 2 tsp granulated sugar to sprinkle before baking
  • Garnish - fresh mint leaves and pomegranate seeds)
  • Optional
  • - Add juice from seeds of 1/4 pomegranate for anti-oxidants, or pomegranate juice
  • - Add a small amount of chopped / dried fruit, raisins, toasted pecans or slivered almonds. (Avoid making batter too heavy or sweet.)
