Beefsteak Stir-fry With Snow Peas, Bell Peppers, Orange, And Garlic


  • 1/2 lb. snow peas, trimmed
  • 2 Tbs. peanut oil or vegetable oil
  • 1 lb. beef tenderloin tips or sirloin tips, cut across the grain into strips 1/2 inch thick
  • Salt
  • Freshly ground black pepper
  • 1 tsp. sugar
  • 6 strips orange zest, each about 3 inches long, cut from a clean orange with a swivel-bladed vegetable peeler
  • 3 garlic cloves, minced
  • 1 large onion, halved and thinly sliced
  • 1 large red bell pepper, quartered, stemmed, seeded, and cut crosswise into thin strips
  • 5-oz. can sliced water chestnuts, drained
  • 2 tsp. grated fresh ginger
  • 2 Tbs. bottled teriyaki or hoisin sauce
  • 1 Tbs. Asian-style toasted sesame oil
  • 1/2 tsp. crushed red pepper flakes (optional)
  • 4 Tbs. thinly sliced scallions
  • 4 C. steamed white rice
