Ingredients
- 1 lg. crusty loaf Italian or French bread
- 2-4 lg. garlic cloves, minced
- 6 plum tomatoes, chopped to 1/4 inch
- 1 lg. bunch fresh basil, chopped, plus whole basil leaves for garnish
- 1/2 C. good quality olive oil (garlic oil is also great here)
- 1/4 C. Romano or Parmesan cheese, grated (can also add Asiago cheese)
- salt and pepper to taste
- 2 C. mozzarella cheese, sliced from block
