  • 6-8 C. homemade chicken stock or low-sodium chicken stock, skimmed of fat
  • 3 Tbs. olive oil
  • 1/2 C. finely chopped shallots (about 2)
  • 1 C. arborio rice or carnaroli rice
  • 1/2 C. dry white wine
  • 4-6 Tbs. unsalted butter
  • 1/2 C. grated parmesan cheese, plus extra for grating or shaving
  • 1/4 C. chopped fresh flat-leaf parsley
  • Salt and freshly ground black pepper
