Spinach & Mushroom Stuffed Rolled Pork Loin With Spicy Apple Jam & Crispy Garlic Shavings

ROLLED PORK LOIN

1.5kg pork loin
1 apple, peeled & cored
1/2 brown onion
1 tbsp yoghurt
200g spinach
200g cup mushrooms, sliced
1 tsp garlic mince
5ml sesame oil
Salt & black pepper for seasoning

SPICY APPLE JAM

1 tbsp olive oil
1 tbsp garlic mince
1 medium size brown onion, diced
1 medium size Granny Smith apple, diced
50ml light soy sauce
15ml sweet soy sauce
15g brown sugar
10g chilli powder
100ml Napoli sauce

TO SERVE:

20ml apple balsamic glaze
2 cloves shaved garlic, deep fried
Julienne of leek (white part only) for garnish
