Bad Ass Nut Roast (30+40 Min, Vegetarian)

Ingredients

  • 110g cashews
  • 110g roasted or spiced peanuts
  • 220g whole wheat breadcrumbs
  • 1 large onion
  • 3 tbsp olive oil
  • 2 eggs
  • 2 cloves garlic
  • Salt and pepper to taste
  • ½ cube of veg stock mixed in 50ml water (or Marmite if you have it)
  • 1 tsp oregano (dried is fine)
  • 1 tsp thyme (again, dried is fine)
  • 1 tbsp parsley (you get the idea)
  • 1 tbsp basil (blah blah blah)
  • 150g tasty cheese (mature cheddar is great)
