Pork Thai Consommé with Poached Cod

Ingredients

Pork Thai Broth

  • 2 pounds pork butt, cut into 1 inch pieces
  • 3 tablespoons 5 spice powder
  • 5 tablespoons soy sauce
  • 3 tablespoons rice wine vinegar
  • 1 tablespoon fish sauce
  • 1 stalk lemon grass, smashed
  • 2 tablespoons ginger, chopped
  • 10 cups chicken stock
  • 2 star anise
  • 4 stalks parsley
  • 4 stalks cilantro
  • 2 lime leaves
  • 1 teaspoon coriander seed
  • 2 tablespoons lime juice
  • 1 large white onion, peeled and quartered
  • salt

Clarifying Pork Thai Broth

  • 3/4 pound pork butt, ground, cold
  • 3 cilantro, chopped
  • 1 cup egg whites (approximately egg whites from 5 eggs)
  • Pork Thai Broth

Poached Cod

  • 1 pound Alaskan black cod, cut in to 4 pieces
  • 2 cups whole milk
  • salt

Assembly

  • Poached Cod, flaked
  • 1 cup bok choy, diced
  • Pork Thai Consommé
  • 3 tablespoons cilantro, picked for garnish
