Ingredients

Pork

  • 4 1 ½ inch thick center-cut pork loin chops, excess fat trimmed
  • 1 tablespoon of olive oil – (15ml)
  • 1 thinly sliced onion
  • 2 peeled, cored and thinly sliced (about 2 cups) of granny smith apples – (500ml)
  • 3/4 cup of chicken broth – (175ml)
  • 1/2 cup of apple cider – (125ml)
  • 1/4 cup of Calvados – (60ml)
  • 2 tablespoons of raisins – (30ml)
  • 1/2 teaspoon of ground ginger- (2.5ml)
  • 1/2 cup of whipping cream – (125ml)
  • 1 tablespoon of Dijon mustard – (15ml)

Brine

  • 4 cups of apple cider – (1000ml)
  • 3 1/2 cups of water – (875ml)
  • 1/2 cup of salt – (125ml)
  • 1/2 cup (packed) of golden brown sugar – (125ml)
  • 3 tablespoons of coarsely ground black pepper – (45ml)
  • 1 tablespoon of dried rubbed sage – (15ml)
  • 2 teaspoons of ground cinnamon – (10ml)

Stuffing

  • 1 1/2 cups of garlic croutons – (375ml)
  • 3/4 cup of chopped apple – (187ml)
  • 3/4 cup of shredded Cheddar cheese – (187ml)
  • 1 tablespoon of raisins – (15ml)
  • 2 tablespoons of unsalted butter – melted – (30ml)
  • 1 tablespoon of orange juice – (15ml)
  • 1 teaspoon of orange zest (5ml)
  • 1 tablespoon of apple cider- (15ml)
  • 1/4 teaspoon of salt – (1.25ml)
  • pinch of cinnamon
  • pinch of fresh nutmeg
