- 1 1 1/2 to 1 3/4 lb lobster
- 1 6qt pot of boiling salted water with lemon
- 6 green asparagus 7" peeled on stalk side
- 6 white asparagus 7" peeled on stalk side
- 1 cup crème fraiche dressing
- 1 cup uzu vinaigrette
- 1 cup white frisse
- 1/2 cup coriander sprigs long and slender
- 10 pieces hydroponic basil
- 4 sections perfect pink grapefruit
