Lobster Salad on Asparagus

Ingredients

Crème Fraiche Dressing

  • 2 cups crème fraiche
  • 4 teaspoons buttermilk
  • 2 Chopped scallions or chives
  • 2 garlic cloves, minced
  • 8 sprigs parsley, chopped
  • 3 teaspoons cider vinegar
  • 2 teaspoons Dijon mustard
  • Salt and pepper to taste

For the Lobster Salad

  • 1 1 1/2 to 1 3/4 lb lobster
  • 1 6qt pot of boiling salted water with lemon
  • 6 green asparagus 7" peeled on stalk side
  • 6 white asparagus 7" peeled on stalk side
  • 1 cup crème fraiche dressing
  • 1 cup uzu vinaigrette
  • 1 cup white frisse
  • 1/2 cup coriander sprigs long and slender
  • 10 pieces hydroponic basil
  • 4 sections perfect pink grapefruit
