  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 teaspoon pickling spice
  • 1/4 teaspoon mustard seeds
  • 1 bay leaves
  • 1 teaspoon salt
  • 1 large bulb fennel, thinly sliced
  • 1 red onion, thinly sliced
  • 1 English cucumber, sliced

Soft Boiled Hen’s Egg And Sauce Gribiche

  • 12 large eggs
  • 1 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 3 tablespoons finely chopped dill pickle
  • 3 tablespoons minced shallot
  • 2 tablespoons chopped drained bottled capers
  • 3 tablespoons minced fresh parsley leaves

Crispy Chicken Nugget And Cracklings

  • 2 chicken thighs, deboned and skinned and cubed (reserve skin for cracklings)
  • 1 cup buttermilk
