Daikon Soup with Shiitake Cigars

Ingredients

Daikon Broth

  • 3/4 pound daikon, peeled and roughly chopped
  • 1 large white onion, roughly chopped
  • 1 large carrot, peeled and roughly chopped
  • 2 stalks celery, roughly chopped
  • 1 red pepper, seeds removed and roughly chopped
  • 1/2 bunch green onion, cut in half
  • 1/2 pound shiitake mushrooms, stems and caps separated (caps reserved for Shiitake Cigars)
  • 1 package enoki mushrooms, bottoms removed, reserve remaining tops for garnishing Daikon Soup recipe (180 g)
  • 3 bay leaves
  • 1 tablespoon black peppercorns, whole
  • 1 bunch bunch cilantro, reserve leaves for Steamed Sweet Potato recipe
  • 12 cups cold water
  • salt

Shiitake Cigars

  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 2 shallots, diced
  • 3 cloves garlic, diced
  • 1/2 pound shiitake mushroom caps, reserved from Daikon Broth recipe
  • salt and pepper
  • 1 tablespoon thyme, leaves picked
  • 1/4 cup Daikon Broth (see recipe)
  • 4 cups water

Daikon Soup

  • Shiitake Cigars
  • Daikon Broth
  • 1/2 daikon, peeled and diced
  • reserved enoki mushrooms from Daikon Broth recipe
  • 1/2 bunch green onion, sliced thin
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1/4 cup soy sauce
  • 3 tablespoons seasoned rice wine vinegar
  • chili oil as desired
