Ingredients

Marinated Cucumber Salad

  • 2 cucumber, peeled, and sliced thin
  • 1/2 cup rice wine vinegar
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 2 teaspoons sesame seeds, toasted in a dry skillet over low heat until fragrant, 3 to 5 minutes

Dipping Sauce

  • 1/2 cup rice wine vinegar
  • 4 tablespoons low-sodium soy sauce
  • 2 teaspoons toasted sesame oil
  • 2 rounded teaspoon slivered fresh ginger

Tuna Salad Rolls

  • 2x7 ounce can water-packed albacore tuna, drained
  • 2 tablespoons olive oil
  • Salt and pepper
  • 32 leaves Boson lettuce, bottom (1/2 inch) core removed
  • 2 small bunches cilantro
  • 2 small bunches mint
  • 2 red bell pepper, stemmed, seeded, cored, and cut into thin strips
  • 2 cups broccoli sprouts
  • 8 scallions, trimmed and cut into 3-inch sections, thick ends split in half lengthwise
  • 2 cups frozen edamame
  • 1 1/2 teaspoons salt to season water
  • Kosher salt to sprinkle over
