Dipping Sauce
- 1/2 cup rice wine vinegar
- 4 tablespoons low-sodium soy sauce
- 2 teaspoons toasted sesame oil
- 2 rounded teaspoon slivered fresh ginger
Tuna Salad Rolls
- 2x7 ounce can water-packed albacore tuna, drained
- 2 tablespoons olive oil
- Salt and pepper
- 32 leaves Boson lettuce, bottom (1/2 inch) core removed
- 2 small bunches cilantro
- 2 small bunches mint
- 2 red bell pepper, stemmed, seeded, cored, and cut into thin strips
- 2 cups broccoli sprouts
- 8 scallions, trimmed and cut into 3-inch sections, thick ends split in half lengthwise
- 2 cups frozen edamame
- 1 1/2 teaspoons salt to season water
- Kosher salt to sprinkle over
