- 1 teaspoon olive oil (or cooking spray)
- 1/2 cup dry white wine (can be non-alcoholic)
- 1x10 ounce can chicken broth

- 3 Roma tomatoes
- 1/2 English cucumber
- 1/4 red sweet onion, slivered
- 3/4 cup feta cheese, crumbled.
- 1/2 cup black olives
- 1/2 teaspoon lemon pepper
- 1 teaspoon oregano
- 1/2 teaspoon thyme leaves
- 1 clove garlic, minced
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon red wine vinegar
- 1 red leaf lettuce
Hollandaise
- 3 egg yolks
- 2 teaspoons lemon juice
- 1/2 teaspoon dry mustard
- 1 teaspoon Tabasco sauce (optional)
- 1/2 cup melted butter
- 1/2 cup 1% milk
