- 1 tablespoon unsalted butter
- 2 tablespoons dark rum
- 1/3 cup heavy cream
- 1 cinnamon stick, broken in half
- 8 ounces bittersweet chocolate, coarsely chopped
- 6 large egg whites, at room temp
GARNISHES
- 2 ounces bittersweet chocolate, at room temp,shaved with a vegetable peeler
- 1/4 granny smith apple
- 1 teaspoon lemon juice
- 2 teaspoons apple jelly or 2 teaspoons quince jelly
- 3 cinnamon sticks
