- 6 oysters
- 6 oyster shells, cleaned
- 1/4 cup all purpose flour
- 1/4 cup cornmeal
- 1/4 cup buttermilk
- 1 large egg
- 1/2 cup olive oil
Sweet Corn Puree
- 1 cup corn niblets
- 2 tablespoons butter
- 1/2 cup chicken stock
- Salt and pepper
Corn Cilantro Salsa
- 1/2 cup corn niblets, cooked
- 1 scallion, finely chopped
- 1/4 red pepper, finely chopped
- 1 teaspoon lemon juice
- 1 teaspoon white wine vinegar
- 1 teaspoon cilantro, finely chopped

- 6 oysters, shucked plus shells cleaned
- 2 strips bacon, finely diced
- 1 small leek, white part only, finely diced
- 2 cups spinach
- 1/2 cup heavy cream
- 2 tablespoons parmesan cheese, grated
