Ingredients

Salt Cod Donuts

  • 1/2 pound boneless salt cod
  • 4 small shallot, minced
  • 1 pound cooked Yukon Gold potato, riced
  • zest of one lemon
  • 1 teaspoon fresh thyme, leaves
  • 4 tablespoons fresh coriander, leaves
  • 2 large egg
  • 1 1/2 tablespoons baking powder
  • 2 tablespoons bread flour
  • freshly ground pepper
  • 4 cups vegetable oil

Tartar Sauce

  • 6 tablespoons sour cream
  • 6 tablespoons yoghurt
  • 6 tablespoons mayonnaise
  • 1 hard boiled egg, passed through a sieve
  • 1 tablespoon chopped fresh dill
  • 2 minced shallot
  • 1 1/2 tablespoons minced dill pickle
  • 2 anchovy, fillets, finely, minced
  • 1 1/2 tablespoons tiny capers
  • juice from half a lemon
  • salt, to taste
  • pepper, to taste
