Salt Cod Donuts
- 1/2 pound boneless salt cod
- 4 small shallot, minced
- 1 pound cooked Yukon Gold potato, riced
- zest of one lemon
- 1 teaspoon fresh thyme, leaves
- 4 tablespoons fresh coriander, leaves
- 2 large egg
- 1 1/2 tablespoons baking powder
- 2 tablespoons bread flour
- freshly ground pepper
- 4 cups vegetable oil
Tartar Sauce
- 6 tablespoons sour cream
- 6 tablespoons yoghurt
- 6 tablespoons mayonnaise
- 1 hard boiled egg, passed through a sieve
- 1 tablespoon chopped fresh dill
- 2 minced shallot
- 1 1/2 tablespoons minced dill pickle
- 2 anchovy, fillets, finely, minced
- 1 1/2 tablespoons tiny capers
- juice from half a lemon
- salt, to taste
- pepper, to taste
