- 1/4 cup roasted garlic puree

- 4 red apples, core and skin removed
- 3/4 cup red beet juice
- 1/2 cup apple juice
- 1/4 cup sugar
- 1/2 cup shoa xing (Chinese cooking wine)
- 2 teaspoons ginger, minced
- 1/4 cup light soy sauce
Pickled Chanterelle mushroom
- 12 ounces chanterelle mushrooms
- 1 teaspoon saffron threads
- 2 tablespoons rice wine vinegar
- 4 tablespoons mirin
- 2 tablespoons sugar
- 2 tablespoons ginger, minced
White Sesame Spinach with Kimizu Sauce
- 2 tablespoons canola or peanut oil
- 1 pound cleaned spinach
- 1 tablespoon sesame oil
- 4 tablespoons white sesame, toasted
Kimizu Sauce
- 4 egg yolks
- 3/4 cup coconut milk
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
