Seared Tuna and Chili Pepper Jelly

Ingredients

Crispy Seared Tuna

  • 2 pounds fresh sushi grade tuna (cut into 6-5oz. blocks)
  • 1 cup cornmeal
  • 1 tablespoon poppy seeds
  • 2 tablespoons vegetable oil (for frying)
  • Fresh ground black pepper and salt

Chili Pepper Jelly

  • 2 cups red bell peppers
  • 1/2 cup Anaheim chili peppers
  • 1/2 cup cider vinegar
  • 1/4 cup lemon juice
  • 2 1/2 cups sugar
  • 15 grams pectin
  • 6 sprigs coriander

Shaved Fennel and Radish Salad

  • 2 bulbs fennel, sliced paper thin
  • 1 cup assorted radishes sliced paper thin
  • 3 tablespoons olive oil
  • 1 lemon, juiced
  • 1 cup mixed leaves of tarragon, mint, chervil and coriander
  • Fresh ground black pepper and salt
  • If you have fresh green fennel tops you can chop them up and add them to your salad

Fragrant Spiced Onion Rings

  • 1 onion, finely sliced paper thin
  • 1 cup milk
  • 1 teaspoon cornmeal
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • 1 teaspoon cornstarch
  • 1/2 litre vegetable oil (for deep frying)
