Crispy Seared Tuna
- 2 pounds fresh sushi grade tuna (cut into 6-5oz. blocks)
- 1 cup cornmeal
- 1 tablespoon poppy seeds
- 2 tablespoons vegetable oil (for frying)
- Fresh ground black pepper and salt
Chili Pepper Jelly
- 2 cups red bell peppers
- 1/2 cup Anaheim chili peppers
- 1/2 cup cider vinegar
- 1/4 cup lemon juice
- 2 1/2 cups sugar
- 15 grams pectin
- 6 sprigs coriander
Shaved Fennel and Radish Salad
- 2 bulbs fennel, sliced paper thin
- 1 cup assorted radishes sliced paper thin
- 3 tablespoons olive oil
- 1 lemon, juiced
- 1 cup mixed leaves of tarragon, mint, chervil and coriander
- Fresh ground black pepper and salt
- If you have fresh green fennel tops you can chop them up and add them to your salad
Fragrant Spiced Onion Rings
- 1 onion, finely sliced paper thin
- 1 cup milk
- 1 teaspoon cornmeal
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- 1 teaspoon cornstarch
- 1/2 litre vegetable oil (for deep frying)
