Ingredients

  • 2 tsp sea salt flakes
  • 2 tsp Sichuan peppercorns
  • 4 (about 180g each, 2cm thick) ocean trout fillets
  • 200g (1 cup) long-grain white rice
  • 35g (1/2 cup) black tea leaves
  • 4 whole star anise
  • 2 x 7cm cinnamon sticks, broken
  • 2 bunches asparagus, woody ends trimmed, quartered
  • 2 granny smith apples, cored, thinly sliced lengthways
  • 1 x 80g pkt baby rocket leaves
  • 2 cups watercress sprigs
  • Dressing

  • 2 tbs light soy sauce
  • 1 tbs peanut oil
  • 1 tsp sesame oil
  • 1 garlic clove, crushed
  • 2 tsp finely grated fresh ginger
  • 2 tsp fresh lime juice
  • 2 tsp brown sugar
  • 1/4 tsp Chinese five spice
  • Salt & freshly ground black pepper
