  • 2 cups fresh basil leaves
  • 2 cups fresh breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 cup fresh flat-leaf parsley leaves, chopped
  • 1/3 cup pine nuts, toasted
  • 3 teaspoons finely grated lemon rind
  • Chargrilled vegetables

  • 6 red capsicums, quartered, deseeded
  • 8 zucchinis, thinly sliced lengthways
  • 2 large eggplants, thinly sliced lengthways
  • Olive oil cooking spray
