  • 5cm-piece fresh ginger, peeled, thinly sliced
  • 2 fresh birdseye chillies, finely chopped
  • 2 garlic cloves, crushed
  • 1kg medium green prawns, peeled, deveined, finely chopped

  • 2 tbs finely chopped fresh chives
  • 2 tsp finely grated lemon rind
  • 24 fresh flour wonton wrappers
  • 1 bunch asparagus, woody ends trimmed, diagonally cut into 3cm lengths
  • Pinch of salt
  • 1/3 cup loosely packed fresh coriander leaves
  • 4 green shallots, ends trimmed, thinly sliced diagonally
