Raspberry and Blackberry Mousse

Ingredients

12 oz. fresh raspberries, rinsed and drained; more for garnish
6 oz. fresh blackberries, rinsed and drained; more for garnish
3/4 cup granulated sugar
1 tsp. fresh lemon juice
Pinch kosher salt
3 large eggs, separated
1-3/4 tsp. unflavored gelatin
Pinch cream of tartar
1/2 cup whipping cream
Small mint sprigs for garnish (optional)

Description

If You Can’t Find Ripe Berries, Don’t Use Unripe, Out-of-season Fruit. Instead, Look For Individually Quick Frozen (IQF) Berries, And Use The Same Amounts.
