Holiday Pork Chops with Cornbread Stuffing

Ingredients

  • 4 thick Pork Chops at least 1 1/2 inch thick with bone in
  • Salt and Pepper to taste

Stuffing

  • 6 tablespoons Butter
  • 1/2 cup Onion diced
  • 1/2 cupOrganic Celery diced
  • 1/4 cupOrganic Bell Pepper (use Red Bell Pepper) diced
  • 1/3 cup Corn Kernels cooked
  • 2 cups Corn Bread crumbled (fresh or packaged)
  • 1/2 cupOrganic Thompson Seedless Raisins
  • 1/4 cup Pecans chopped
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Dried Sage
  • 1/2 cup Chicken Broth (more or less just to moisten)
  • Salt and Pepper to taste
  • 1 tablespoon Canola Oil
