  • 1 cup cherry tomatoes, cut in half
  • 1 cup shredded reduced-fat Cheddar chees
  • 1 cup black beans, drained and rinsed
  • 1/2 cup diced bell pepper
  • 1/3 cup chopped fresh cilantro
  • 1/4 cup finely chopped onions
  • 1 jalapeño pepper, seeded and finely chopped
  • 1/4 cup Carapelli Extra Virgin Olive Oil
  • 3 tablespoons white vinegar
  • Salt and pepper, to taste
