  • 1 pound chorizo or Italian sausage links
  • 1 cup sliced celery
  • 1 cup chopped onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • 2 teaspoons minced fresh garlic
  • 2 (16-ounce) jars CHI-CHI'S® Thick & Chunky Salsa Mild
  • 2 cups cubed (3/4 inch) cooked chicken
  • 2 cups water
  • 1 cup long-grain rice
  • 2 teaspoons paprika
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/4 teaspoon coarsley ground pepper
  • 1/4 teaspoon dried thyme leaves
  • 1 bay leaf
  • 1 pound (25 to 30) fresh or frozen raw shrimp, shelled, deveined and rinsed
  • 1/4 cup chopped fresh cilantro
