  • 1/4 cup dry red wine, dry sherry, or orange juice
  • 3 tablespoons Dijon-style mustard
  • 3 tablespoons olive oil or cooking oil
  • 2 tablespoons grated fresh ginger or 1 teaspoon ground ginger
  • 2 tablespoons tomato paste or catsup
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground black pepper
  • 2 small cloves garlic, minced
