- 1 medium leek, trimmed, cleaned thoroughly, and sliced (white part only), or 1/3 cup chopped onion
- 2 medium apples, peeled, cored, and coarsely chopped
- 2 tablespoons apple cider or chicken broth
- 1 10 ounce bag prewashed spinach, stems removed (about 10 cups)
