Fruit And Chicken Salad
4 1/2 pounds, or use
6 cups cooked, cubed chicken meat
1 stalk celery, washed and trimmed (use entire stalk)
2 large cans (20 ounces each) pineapple tidbits or chunks, drained and juice reserved
2 large cans (16 ounces each) Mandarin oranges, drained (save juice for other use)
2 large apples
1 tablespoon lemon juice
1 cup sour cream
1 1/2 cups Miracle Whip or mayonnaise
3 tablespoons juice from canned pineapple
3 tablespoons orange juice
1 cup nuts, coarsely chopped (optional)
1 large head lettuce (red lettuce is especially nice)
