1 lb lamb or veal liver
1 lb ground pork or pork and veal
1 clove garlic (1/2 if large), (optional)
3 spring onions
1 1/2 cups soft, fine breadcrumbs
2 eggs, lightly beaten
1/4 cup dry sherry
2 tablespoons brandy
1/2 teaspoon dried marjoram
1/2 teaspoon dried thyme
1/2 teaspoon ground allspice
I 1/2 teaspoons salt
Freshly ground black pepper
Bacon rashers, rind removed
